Barbie's Artichoke Dip


2 Cups Mayonnaise
2 14oz. cans artichoke hearts, drained and chopped
1 4oz. can chopped green chiles, drained
2 Cups freshly grated Parmesan cheese
6 green onions, chopped
2 cloves garlic, minced
pinch of cayenne pepper
butter or cooking spray for greasing the pan
2 extra Tablespoons Parmesan cheese for the top



  1. Preheat oven to 350
  2. Combine Mayonnaise, artichoke hearts, chiles, Parmesan cheese, green onions, garlic and cayenne pepper in bowl, stirring well.
  3. Spoon mixture into 1 quart baking dish, coated with butter or cooking spray. Bake, uncovered, for 25 minutes (guessing) or until hot and bubbly. You can microwave instead, don't know for how long.
  4. Sprinkle top with extra Parmesan cheese. Broil until lightly browned.
  5. Serve with Pita chips, Melba rounds or Tortilla Chips. YUM!!
